Mediterranean Polenta Recipe (Gluten-Free)
A well reputable home cook needs to be ready for all kind of occasions. My aunt who suffers celiac disease pays us a visit once or twice a year. Since she is sensitive to gluten, I prepare her a special gluten free menu throughout her stay. People have prejudice about the taste of gluten free meals but I’m telling you.. they are really delicious! This particular one is an example of Italian cuisine. The critical point of this recipe is that it has to be cooked at low heat!
Let’s see the steps..
Combine corn semolina, salt, sugar, 1 tbsp olive oil and grated garlic in a pot and cook at low heat.
Scorch the pine nut and parmesan with 1 tbsp olive oil for 3 minutes in another pan.
Chop the greens, combine with pine nut and parmesan and decorate the cooked polenta with the mixture.
Polenta does not taste as nice when cold 🙂
