Mediterranean Pasta Recipe

When it comes to bachelor food, here is the master of it. I spent 7 years of my life as a bachelor which made me one of the best quick and easy recipe hunters. This pasta recipe here has been one of the most life saving ones for me! Open up your fridge, gather all left over greens and a bag of pasta…. You are saved for the evening:)

Making the pasta

To begin with, pour 30 ounce water and add 2 pinches of salt and boil for 15 minutes.

My favorite pasta type is Tortiglioni. You may use shells or spaghetti or any kind of choice…

Add your pasta to boiled water and wait until it softens. Instructions would say 15 minutes however since I like it ‘Al Dente’  I cooked it for 8 minutes only. Of course I’m leaving it up to your taste..

Get the dressing done

Now let’s get to our leftover greens:) Have some olive oil ready. Luckily I had some mozzarella to increase the taste.

Follow the steps below for the ultimate dressing.

Chop the lettuce, dill and peppers in small pieces…

.. and soak with olive oil.

Add mayo and grated mozzarella (I used 7 ounces, you may use a little less) to the mixture.

Pour the pasta into the platter and place the mixture on it.

The best part is that it’s quick and not junk! It is satisfactory and yet healthy.
